An inexpensive oil often loses its organoleptic and nutritional properties, does not guarantee the same food safety, and certainly does not offer the same taste experience.

To obtain the PDO certification, an olive grower must apply to the Ministry of Agricultural, Food and Forestry Policies. Only oils that comply with the rules established in the production specification are granted certification, meaning: cultivars, production area, production methods, and control structure. Finally, there are also strict rules on labeling and packaging.
