Granciara: The Rare Essence of Molise in Our Organic Single-Cultivar Cerasa EVOO

Our Organic Single-Cultivar Cerasa EVOO is born from centuries-old olive trees in the heart of the Granciara estate in Montenero di Bisaccia, a Grand Cru of excellence in the Molise region of Italy. This single-cultivar oil is the result of a special selection of the extremely rare native Cerasa di Montenero olives. Furthermore, the name "Cerasa" derives from its cherry-like shape, testifying to a profound and unique bond with the territory. However, only a very few centuries-old trees of this cultivar remain in the entire region, making our Cerasa EVOO a true treasure of rarity and tradition, expressing a unique genetic heritage.

The Unique Sensory Profile of Cerasa EVOO: An Experience to Savor

With its distinctive pale yellow colour and fluid consistency, Granciara Cerasa EVOO reveals itself as a refined and complex oil. First, delicate hints of freshly cut grass, an almond-like note, and the fresh, citrusy notes of lemon-scented thyme emerge on the nose.

Next, the palate offers a surprising experience: the bitterness of eggplant blends with a spicy touch of ginger and sweet paprika, for a harmonious and never overpowering finish. Therefore, its extraordinary versatility makes it ideal for daring pairings: try it with cooked vegetables, rich legume soups (like the famous Altamura Lentils), or on delicate fish carpaccio. Guaranteed Quality: From Harvest to Cold Pressing

Regenerative Farming and Sustainable Harvesting

We harvest the olives by hand with the help of electric shakers. In this way, this method contributes significantly to environmental sustainability by reducing pollution compared to traditional means. The adoption of organic and regenerative farming methods ensures not only the purity of the oil but also a deep respect for the land and its biodiversity, maximizing the quality of the Cerasa olive.

The Secret to Freshness: Pressing Within 12 Hours

The olives are then cold-pressed within a mere 12 hours of harvesting. Crucially, this rapid process allows us to guarantee maximum quality and fully preserve all the organoleptic properties and high polyphenol content. The result is an oil that is exceptionally fresh, rich in flavour, aroma, and health benefits, maintaining the unique characteristics of the Cerasa Single-Cultivar.

Technological Innovation Serving Olive Tradition

Our family's passion and engineering studies merge harmoniously with agricultural tradition.
